Incredible edible, ou encore, vegetable then and now….(from English to American)
The vegetable that I like are:
Endives salads: Endives can be eaten raw. A delicious salad can be made by adding diced bacon, garlic, or finely grated Gruyère cheese. The leaves can also be prepared in the same manner as with green vegetable; they can be boiled in salted water and sautéed in butter. They are also good when braised with cream, and are suitable for use in gratins, fritters, vegetable pies and soufflés.
Pumpkin and Squash: for pumpkins and squash there are numerous recipes, according to which they may be used for sweet or savory dishes. They can be cooked with onions in purees, gratins or in soups. Cut into pieces, cooked in the pressure cooker and seasoned with parsley and garlic they are served as a vegetable to accompany meat dishes. Sweet, they are used to make pies and vanilla desserts. They can be used to prepare soufflés, added to pancake batter, and pureed as side dishes.
The one I prefer is the spaghetti squash. It’s oval and yellow, small or big!
Fennel: they are raw bulbs with their sweet aniseed flavor, are delicious in simple and or mixed salads. They can be cut in slices and served as appetizer. Sautéed in butter or braised in stock, with cream or in a gratin they compliment meat and fish dishes. The seeds are used to make licorice while the leaves are used in salads or to give aroma to cold sauces. A decoction of the roots is used to help the organism eliminate toxins; therefore, it is recommended in weight or loss diets.
It may sound odd, but I love potatoes…
Famous gourmets Chefs have dedicated entire books full with original and tasty recipes solely to the potato. Generally, it is consumed after being peeled, cooked in water, in oil, in sauces or steamed. They can be prepared in soups, salads, purees, fritters, croquettes, soufflés, gratins, ragouts, fried and even stuffed. Potatoes are marketed whole canned, cooked, fried, and frozen. Potato chips are also a common appetizer or snack.
